My name is Mary Beth and I have strong opinions about the importance of variety and visual interest in low carb eating. With years of experience (and experimentation!) behind me, I've tried the good and the awful, learned from my own mistakes, and have delighted in my victories. I tell you all about it in the blog.

Who said low carb has to be BORING?!?!
Not me!

The most common misconception about the low carb lifestyle is that it means eating nothing but meat, cheese, eggs, chicken, fish and salads. Nothing could be further from the truth! A rich variety of great tasting dishes are available to help the low carb eating plan live up to its reputation as "the diet of Kings." All it takes is a little knowledge about what creative companies and cooks have developed.

Every picture you see on this site was taken by me at my house. I made very dish you see here. Some use commercial low carb products (some of which, sadly, are no longer available); others are straight from scratch. These are the meals and snacks I have prepared. . . and every one of them is low carb. Some recipes use as little as three ingredients and can be thrown together in under 5 minutes. Others take a little more work, but are well worth the time and effort.

This is real food from real people.

Whether you are low-carbing to feel great, lose weight, or help regulate your blood sugar levels, you can enjoy what Dr. Atkins referred to as the Diet of Kings.

The pictures on this site are merely intended to allow you to get some ideas for things you can make. I've been asked several times to post the recipes, but frankly I'm way too much of a "little bit of this," "little bit of that" cook to do a good job writing exact ingredient amounts and instructions. How many strawberries and how much Splenda do I use in my strawberry cream cheese? Heck if I know! I just keep throwing strawberries into the food processor until the color looks right and add Splenda until I like the taste. Some of these items don't have a real "recipe per se. On the caesar salad, I start with half heads of romaine, drizzle on caesar dressing, sprinkle on parmesan cheese and cracked pepper, and add croutons made from low carb bread, melted butter and garlic.
